1lb.grass-fed ground beef
Salt and black pepper to taste
12slicescheddar cheese
6small corn (or flour) tortillas
½small head of lettuce
3small tomatoes
½small red onion
12pickle chips
Ketchup or your favorite dressing or topping
Instructions
Start out by forming the patties.
Split one pound of ground beef into equal 6 pieces. Roll one piece of ground beef at a time in between 2 layers of plastic food wrap. Make them thin and much larger than the tortilla itself. This is because the patty will shrink during cooking.
Next, fry the patties on the stovetop in a large skillet on medium-high heat or grill them on the BBQ to your preference (use a grilling mat when grilling them on the BBQ since the patties are very thin).
Season each side with sea salt and freshly cracked pepper to taste per patty side. Personally, I like mine well done but you can cook yours to whichever level of doneness you prefer.
Towards the end of the frying or grilling, place the cheese of your choice on top of the burger and then place a tortilla on top of the cheese. Let this warm for about a minute or so.
After that, remove them from cooking. Immediately, shape them into a taco-looking shape (folding them in half), and let the meat rest for a few minutes before placing it onto a taco stand for assembly. This will make the burger taco hold its shape while you’re adding toppings.
Top them with shredded lettuce, sliced tomatoes, pickles, and onions, then drizzle with your favorite sauce.
