For the Chicken and Wild Rice Soup
4medium – yellow or red potatoes
3 -bay leaves
1large – carrot
2stalls - celery
16oz.– mushrooms
¼– yellow onion
3large – garlic clove
1chicken – breast
1cup– heavy whipping cream
1tsp.– organic chicken bouillon paste
1pack - of wild rice with seasoning
1tsp.– Mrs. Dash seasoning

How to Prep and Cook the Chicken
Start by taking your chicken breasts and cutting them into small, bite-sized pieces. Once you've done that, season the chicken with salt and pepper to your personal preference.
To cook the chicken, add a little bit of olive oil to a saucepan and place it over medium-high heat. Once the oil is hot, add the chicken pieces and cook them until they turn a beautiful golden brown color on both sides.
Once the chicken is fully cooked, set it aside for later use.
How to Make the Chicken and Wild Rice Soup
Next, peel and dice your sweet potato into small chunks. Do the same with your carrots, and slice your celery into thin pieces.
Add these vegetables, along with the cooked chicken, to a large pot filled with boiling water. Season the mixture with salt to enhance the flavor.
To add depth to the flavor of your soup, toss a few bay leaves into the pot. Reduce the heat to low or medium and allow everything to simmer for about five minutes. This will help the flavors infuse together.
While the soup is simmering, start to sauté your mushrooms in another saucepan. Add chopped onions and minced garlic to the pan, seasoning the mixture with your favorite herbs.
For this recipe, I recommend using Mrs. Dash seasoning, the seasoning packet that came with your wild rice blend, and additional salt chicken bouillon paste, and
pepper to taste. Continue to sauté these ingredients together for a few more minutes over medium-high heat.
Transfer the sautéed mushroom mixture into the pot with the simmering vegetables and chicken.
Let it simmer for a few more minutes to allow the flavors to meld together. Then, pour in heavy cream and add the wild rice blend to the pot, letting it simmer for about 5 more minutes. Taste the soup and adjust the seasoning with more salt and pepper if necessary.
Switch off the stove and let the rice simmer in the hot soup. This will allow the rice to cook and absorb the delicious flavors of the soup.
Allow the soup to sit for about an hour before serving. This will let the flavors develop even further, resulting in a rich, hearty soup that's sure to satisfy.
