Ingredients
  • Cranberry Filling
  • 8 oz. – fresh cranberries
  • ½ cup – white sugar
  • 3 tbsp. water
  • Shortbread Dough
  • 2 cups – all-purpose flour
  • 2 tbsp. – cornstarch
  • ¼ tbsp. – salt
  • 2 sticks – unsalted butter softened
  • 1/3 cup – brown sugar
  • 1 tsp. – pure vanilla extract
  • 1 tsp. – confectioners’ sugar for dusting
  • Cream Cheese Filling
  • 1 pack – cream cheese softened
  • 1 small – egg
  • ¼ cup – white sugar
  • 2 tbsp. – heavy whipping cream
Instructions
  1. How to make Cranberry Filling
  2. Add fresh cranberries, water, and sugar into a small sauce pan.
  3. Place the sauce pan on the stove and stir constantly unit it boils.
  4. Reduce to low heat, and let it simmer for 5 minutes stirring it from time to time. Remove from the stove and set aside to cool.
  5. How to make Cream Cheese Filling
  6. Place cream cheese and sugar into a medium bowl. Beat on high for 2-3 minutes or until well combined.
  7. Add egg and mix again for 2 minutes.
  8. Add heavy whipping cream and beat for another 2 minutes until all are well combined. Place it in the fridge until you are ready to use it. It will be a little thicker and make it easier to place cranberry sauce on.
  9. How to make Shortbread Dough
  10. In your electric mixer bowl add softened butter. Beat the butter on high for 3 minutes scraping the sides of the mixer bowl a few times.
  11. Add brown sugar and beat for a couple of minutes until combined. Scrape the sides of the mixer bowl and then beat again for a minute.
  12. Add pure vanilla extract and beat once more for another minute.
  13. Sift flour, salt and corn starch into a medium bowl. Wisk with a wire whisker until well combined, and then sift it again into the butter.
  14. Stir in the flour until all combined.
  15. Separate ¼ of the dough cover it with plastic wrap and place it in the freezer.
  16. Assembling the Bars
  17. Preheat oven to 375 F. Line 12 X 9” pan with parchment paper. Crumble the rest of the dough over the whole pan for easier pressing.
  18. Press the dough evenly.
  19. Take the cream cheese mixture out of the freezer and pour and spread it over the pressed dough.
  20. Spread cooled cranberry sauce in small amounts (If you pour all the sauce out at once it wont spread well and makes a big mess).
  21. Then take the frozen dough from the fridge and grate it over cranberries. Scatter out evenly with a fork. Bake uncovered at 375 F, for 35 minutes.
  22. Remove from the oven and let it cool for 15 minutes in the baking pan before taking it out of the pan.
  23. Remove from the pan. Dust with 1 tsp. of confectioners’ sugar. Cut it into 15 equal bars.
