This one-pan dinner recipe is one of those much appreciated quick solution meals for hectic, pressure-packed, and time-limited days. It is super quick to chop, throw together, bake and serve.  If you can plan ahead a bit, marinate the meat for a richer taste, but it's not absolutely necessary when in a tight time crunch.

Ingredients
  • 1.5 lbs. 680 g – beef
  • Meat Seasoning Ingredients:
  • 1 tsp. 5 ml – Mrs. Dash seasoning
  • ½ tsp. 2.5 ml – sea salt
  • 1/8 tsp. 0.6 ml – black ground pepper
  • 2.5 lbs. 1.13 kg – red potatoes
  • 1 lb. 454 g – organic baby carrots
  • 1 large bunch – organic broccoli
  • Organic parsley for garnishing
  • Vegetables Seasoning Ingredients:
  • ½ cup 120 ml – homemade mayonnaise
  • ½ tbsp. 15 ml – Mrs. Dash seasoning
  • ½ tsp. 2.5 ml – sea salt
  • 2 large – garlic cloves
Instructions
  1. Meat Seasoning Instructions:
  2. Cut meat into 1 inch (2.5 cm) cubes and place into a small glass bowl that has a lid. Season with Mrs. Dash seasoning, salt, and pepper. Cover the bowl with a lid and let the meat marinate for 2 - 4 hours in the fridge.
  3. Vegetable Preparation and Seasoning Instructions:
  4. Preheat the oven to 400 F (204 C). Rinse broccoli, cut into florets and place into a large bowl. Rinse and scrub potato with a vegetable brush. Cut potato into 1 inch (2.5 cm) cubes, and add to broccoli florets. Then rinse baby carrots and add to the potato and broccoli florets. Add mayonnaise, Mrs. Dash seasoning, salt, and pepper. Mix to combine.
  5. This step is optional. Separate broccoli from potatoes and carrots (I add broccoli halfway through roasting time because we like broccoli a bit crunchy).
  6. Place vegetables in a 13 x 18 pan lined with parchment paper. Add seasoned meat and bake for 20 minutes at 400 F (204 C).
  7. Remove the pan from the oven. Add broccoli florets and roast for additional 20 minutes.
  8. Remove from the oven and serve.
