The Perfect  Radish Salad

This tasty radish salad features crisp radishes, fresh herbs, and creamy Greek yogurt dressing for an unbelievably simple and tasty spring and summer salad!

Ingredients

– 1 bunch – organic green onion – ▢2 bunches – organic radishes – ▢½ long – organic English cucumber (or 3 pickling cucumbers) – ▢1 tbsp. - chopped fresh dill – ▢½ cup – organic Greek yogurt (or organic sour cream) – ▢Salt and freshly cracked black pepper to taste

Step 1

In a large bowl, mix together the chopped chives, sliced cucumber, and sliced radishes.

Step 2

 In a small bowl, whisk together the olive oil, white vinegar, salt, and black pepper to make the dressing.

Step 3

Pour the dressing over the vegetables and toss until the vegetables are coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

Step 4

Before serving, give the salad a quick stir and adjust the seasoning if necessary.
