The Easiest Cakesicles

These Cakesicles combine the moist, rich goodness of cake is with the fun and convenience of a popsicle in these lovely sweets. Perfect for leftover cake!

Ingredients

Step 1

Place the leftover cake sponge from the raspberry mini cakes recipe into the mixing bowl of an electric mixer, along with cake filling or frosting.

Step 2

Using a petal attachment on low speed, mix the frosting with the cake sponge scraps until smooth and well incorporated.

Step 3

Fill popsicle molds with the cake mixture, insert the popsicle sticks, and place them in the freezer for about one hour.

Step 4

Gently squeeze the sides of the mold to release the cakesicles, and place them onto a platter.

Step 5

Refrigerate the cakesicles to allow them to thaw slightly before dipping them into chocolate ganache. Thawing them will prevent the ganache from cracking.

Step 6

Dip the cakesicles into melted chocolate ganache, or alternatively, drizzle the ganache over them. Use a spatula to scrape off any excess chocolate.

Step 7

Dust them with freeze-dried raspberries, then place them onto parchment paper or wax paper for the chocolate to set completely. For faster setting, refrigerate the dipped cakesicles for about 15 minutes.
