Ingredients

– 1 pack - (16-20 ct) flour tortillas – ▢6 – large potatoes – ▢1 stick - Beef Chorizo – ▢8 – medium eggs – ▢1 tsp – salt – ▢½ cup - whole milk – ▢5 – large tomatoes – ▢3 – garden cucumbers or 1 English cucumber – ▢1 lb – sour cream

Step 1

– Peel, wash, and cube the potatoes. – Sauté the potatoes in a skillet over medium heat for 10 minutes. – Add chorizo and continue cooking on low heat for 5 more minutes.

Step 2

– In a small bowl, beat eggs, milk, and salt together. – Pour the egg mixture into the skillet with potatoes and chorizo. – Cook and scramble for 5 minutes, stirring constantly.

Step 3

– Heat tortillas in a skillet over low heat for 1 minute on each side. – Place the tortillas in a towel-lined bag to keep them warm. – Fill each tortilla with the potato/egg/chorizo mixture. – Top with sliced cucumbers, tomatoes, and sour cream. – Fold and enjoy your delicious breakfast tacos!
