The Easiest  Breakfast Omelet

Ingredients

– 5 - large potatoes – ▢8 - bacon strips (see how to broil bacon it in the oven) – ▢¼ cup – milk or half & half – ▢6 – large eggs – ▢¼ cup - olive oil or bacon fat (reserved after frying bacon) – ▢Salt and pepper to taste

Step 1

Fry or broil bacon until crispy. Once done, place it on a paper towel-lined plate to absorb excess grease. Retain about two tablespoons of bacon grease in the pan. Wash, peel, and dice potatoes into small cubes. Sauté them in the bacon fat until tender, seasoning with salt and pepper.

Step 2

Preheat the oven to 400°F. Grease a baking pan with the reserved bacon grease. Spread the sautéed potatoes evenly on the bottom of the pan, creating a base layer. Sprinkle the bacon pieces over the potatoes for added flavor and texture.

Step 3

In a small bowl, whisk together eggs, milk, salt, and pepper until fully blended. Pour the egg mixture over the potatoes and bacon in the baking pan. Cover the pan with aluminum foil and bake in the preheated oven for approximately 25 minutes.

Step 4

Once baked, allow the omelet to cool briefly before slicing and serving. Garnish as desired and enjoy your homemade breakfast omelet!
