Simple Walnut Carrot Cake

– 2 cups all-purpose flour – 2 tsp. baking powder – 1 tsp. baking soda – 1 tsp. cinnamon – 1/2 tsp. salt – 3 large eggs – 1 1/2 cups granulated sugar – 1/2 cup vegetable oil – 1/2 cup unsweetened applesauce – 2 tsp. vanilla extract – 2 cups grated carrots – 1 cup chopped walnuts – Powdered sugar for dusting (optional)

Step 1

Preheat your oven to 350°F (180°C). Grease and flour a 9x13 inch baking pan. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

In a large bowl, beat the eggs with an electric mixer until frothy. Add the sugar, vegetable oil, applesauce, and vanilla extract. Beat until well combined.

Gradually add the flour mixture to the egg mixture and stir until just combined. Fold in the grated carrots and chopped walnuts.

Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
