Start by preheating the oven to 350 F (180 C)

Sift and whisk all the dry ingredients: flour, cinnamon, nutmeg, baking soda, and baking powder together in one bowl until well blended. Set aside until ready for use.

 Peel, rinse and grate carrots (I prefer using a Korean carrot grater) and set aside until ready for use.

Whip eggs and sugar on high for 15 minutes in a large bowl. Reduce a mixer to medium speed and add vanilla extract and buttermilk. Mix for another minute or so not increasing the mixing speed.
