Ingredients

For Potatoes ▢5 lbs. – yellow potatoes ▢1 tbsp. – salt For Creamy Mixture ▢2 tbsp. olive oil ▢1 lb. – carrots ▢4 large – garlic cloves ▢½ medium – yellow onion ▢4 tbsp. - unsalted butter ▢¼ cup - all-purpose flour ▢1 quart – organic Half & Half ▢2 tsp. – Mrs. Dash ▢¾ tbsp. – sea salt (or to taste) ▢¼ tbsp. – black ground pepper (or to taste) ▢1 tbsp. - organic chicken bullion paste

Step 1

Peel and thoroughly wash the potatoes. Cut potatoes into four equal-sized pieces. Place them in a saucepan, cover with water, and add salt. Boil for about 15 minutes until tender. Drain and set aside.

Step 2

Peel and grate carrots, chop half of a yellow onion, and finely chop four large cloves of garlic. Sauté onion, garlic, and grated carrots in olive oil for 5 minutes. In a preheated Dutch oven, melt 4 tablespoons of unsalted butter. Add flour, whisk for 10 seconds, pour in Half & Half, and add the sautéed mixture. Season with Mrs. Dash, salt, pepper, and chicken bullion paste. Simmer for a minute. Set aside.

Step 3

Preheat the oven to 350°F. Transfer cooked potatoes to a large baking pan. Pour the creamy mixture over the potatoes, ensuring even coating. Bake uncovered for 45 minutes or until heated through.

Step 4

Remove from the oven. For creamier potatoes, gently mix. Serve as a delightful side dish or a satisfying main course. Enjoy!
