Homemade  Candied Cherries

Ingredients

– 2 - large eggs – ▢4 ½ cups – powdered sugar – ▢1 tsp. – cherry extract For the Coating: – ▢1 cup – granulated sugar – ▢2 tbsp. – yellow food coloring – ▢1 tbsp. – red food coloring – ▢6 tbsp. - water – ▢A pine tree branch with long needles

Step 1

Separate egg yolks from whites and place the whites in a medium bowl. Add one cup of powdered sugar and mix until thick.

Step 2

Gradually add more powdered sugar (up to 5 cups total) until the mixture thickens. Stir in a teaspoon of cherry extract.

Step 3

Dilute 2 tbsp. of yellow food coloring with 2 tbsp. of water in a small bowl, and 1 tbsp. of red food coloring with 1 tbsp. of water in another bowl.

Step 4

Pinch off 2-4 round balls at a time from the sugar mixture. Coat one ball in yellow, then dip one side in red to create a cherry shape.

Step 5

Transfer the colored cherry onto a plate with granulated sugar. Sprinkle more sugar and gently roll the cherry into a round shape.

Step 6

Make a dimple on one side of the cherry and insert a prepared stem (pine needles) into the dimple.

Step 7

Set the sugar-coated cherries on a clean platter to dry for at least 12 hours until completely set and ready on the inside.
