Step 1

In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until evenly combined. Divide the mixture into 12 cups of a muffin tin and press down firmly to create a crust.

In another mixing bowl, beat the farmer's cheese until smooth and creamy. Add the condensed milk, lemon juice, vanilla extract, and lemon zest to the bowl with the cheese. Mix until smooth and combined.

Step 3

In a separate mixing bowl, whip the heavy cream until it forms stiff peaks. Gently fold the whipped cream into the cheese mixture until well combined.

Step 4

Divide the mixture evenly among the muffin cups. Chill the cheesecake desserts in the fridge for at least 3 hours, or until set.
