Easy Pumpkin  Pecan Bread

Ingredients

For Bread Batter – ▢3 ¾ cups - all-purpose flour – ▢½ tsp. - sea salt – ▢1 tsp. - baking soda – ▢1 tsp. - baking powder – ▢1 tsp. - ground cinnamon – ▢1 tsp. – pumpkin pie spice – ▢¼ tsp. - nutmeg – ▢½ cup - organic sugar – ▢1 cup - brown sugar – ▢3 – large eggs – ▢2 tsp. - vanilla extract – ▢¼ cup – coconut or olive oil – ▢2 cups – pumpkin puree (I used homemade pumpkin puree) – ▢1 ¾ cups – chopped toasted pecans + ¼ cup for topping the bread batter before baking the bread For Bread Glaze – ▢2 cups – powdered sugar – ▢3 tbsp. – whole milk – ▢½ tsp. – pure vanilla extract – ▢½ tsps. – cinnamon – ▢¼ tsp. – pumpkin pie spice

Step 1

– Preheat the oven to 350°F. Grease two 9 x 5-inch loaf pans generously with unsalted butter. – Combine all-purpose flour, sea salt, baking soda, baking powder, ground cinnamon, and pumpkin pie spice in a bowl. Blend these ingredients evenly using a hand whisk and set aside.

Step 2

– In a separate bowl, beat eggs, sugar, and brown sugar with an electric mixer on high for about 5 minutes until the mixture lightens in color. – Add vanilla, oil, and pumpkin puree to the egg and sugar mixture. Mix on medium speed until just combined.

Step 3

– Gradually add the dry ingredients to the wet mixture, incorporating a cup at a time to ensure a smooth batter.  Divide the batter equally between the two prepared pans and bake in the preheated oven for 50 minutes at 350°F. Check for doneness using a toothpick inserted into the center.

Step 4

– Allow the baked loaves to cool in the pans for about 5 minutes, then transfer them to a cooling rack for an additional 10 minutes. – Prepare the glaze by mixing all glaze ingredients in a small bowl until smooth. Once the bread has cooled, drizzle half of the glaze over each loaf. Allow the glaze to set before slicing. – Your homemade pumpkin pecan bread is now ready to enjoy, ideally paired with a homemade latte!
