Creamy Broccoli Tomato Salad

Ingredients

– 3 - broccoli heads – ▢10 oz. - cherry tomatoes – ▢1 cup - shredded red cabbage – ▢½ cup - dried cranberries – ▢½ cup - slivered Almonds (toasted) – ▢4 oz. - cheddar cheese – ▢Juice of small lemon – ▢6 strips - broiled bacon Salad Dressing and Seasoning Ingredients – ▢½ cup - ranch dressing (I used a homemade ranch recipe) – ▢½ cup - Greek yogurt – ▢Salt and pepper to taste

Step 1

Broil bacon until crispy, set aside to cool. Cut broccoli into bite-sized florets, squeeze lemon juice over them. Soak shredded red cabbage in ice-cold water, then drain and dry. Slice cherry tomatoes, cube cheddar cheese, and cut bacon into small pieces.

Step 2

In a large bowl, mix broccoli, tomatoes, red cabbage, cheddar cheese, slivered almonds, cranberries, and bacon.

Step 3

Whisk together ranch and Greek yogurt in a separate bowl.

Step 4
