Ingredients

Nalisniki  Batter Ingredients – ▢4 cups – organic whole milk – ▢5 – eggs – ▢¼ tsp. – sea salt – ▢¼ cup - extra light olive oil – ▢3 cups – organic all-purpose flour Nalisniki Cheese Filling – ▢24 oz. – cottage cheese (you may substitute cottage cheese with homemade farmer's cheese) – ▢8 oz. – cream cheese softened – ▢½ - ¾ cup – organic sugar – ▢1 tsp. – vanilla extract – ▢4 tbsp. – unsalted melted butter

Step 1

– In a large bowl, combine milk, eggs, salt, and oil. – Beat with a hand mixer for 30 seconds. – Divide batter in half. – Sift in flour to one half and mix until smooth. – Slowly add reserved batter to adjust consistency.

Step 2

– Pour a cup of batter onto a crepe maker. – Heat and cook for 15-20 seconds. – Optionally, flip for 5 more seconds to prevent sticking. – Set cooked crepes aside.

Step 3

– Grind cottage cheese for easier use. – In a bowl, combine cottage cheese, cream cheese, sugar, and vanilla. – Mix with a hand mixer for 2 minutes until combined.

Step 4

– Place a crepe on a cutting board, dull side up. – Spread a rounded tablespoon of filling evenly on the crepe. – Roll it into a tight roll and cut in half. – Place crepes in a ceramic pan.

Step 5

– Coat the first row of crepes with melted butter. – Place the second row of crepes in the opposite direction. – Repeat until all crepes and filling are used. – Cover with foil.

Step 6

– Bake at 350°F for 45 minutes. – Remove from oven when done.
