Ingredients

Nalisniki  Batter Ingredients – ▢4 cups – organic whole milk – ▢5 – eggs – ▢¼ tsp. – sea salt – ▢¼ cup - extra light olive oil – ▢3 cups – organic all-purpose flour Nalisniki Cheese Filling – ▢24 oz. – cottage cheese (you may substitute cottage cheese with homemade farmer's cheese) – ▢8 oz. – cream cheese softened – ▢½ - ¾ cup – organic sugar – ▢1 tsp. – vanilla extract – ▢4 tbsp. – unsalted melted butter

Step 1

In a mixing bowl, whisk together eggs, milk, water, sugar, salt, and vegetable oil until combined.

Step 2

Add flour gradually to the mixture, whisking continuously until the batter is smooth and free of lumps.

Step 3

Let the batter rest for 10 minutes to allow the gluten to develop. Heat a non-stick frying pan over medium heat and lightly grease it with oil or cooking spray.

Step 4

Pour a small amount of the batter into the frying pan and swirl it around to cover the entire surface of the pan. Cook for about 1 minute, or until the crepe is set and lightly browned on the bottom.

Step 5

Flip the crepe over with a spatula and cook for an additional 30 seconds on the other side. Repeat steps 5 and 6 until all of the batter has been used. Preheat the oven to 350°F (180°C).

Step 6

In a mixing bowl, combine cottage cheese, cream cheese, egg, sugar, and vanilla extract. Mix everything until smooth. Spoon about 1 to 2 tablespoons of the cheese mixture onto each crepe and roll it up.

Step 7

Place the crepes in a baking dish and bake in the preheated oven for 15-20 minutes, or until heated through. Serve warm, topped with your choice of fruit, whipped cream, or syrup. Enjoy!
