Tasty Puff Pastry Apple Turnovers (Perfectly Golden Brown)

Cinnamon Apple Turnovers Filling Ingredients
¼cup– organic sugar(or white granulated sugar)
¼cup– organic light brown sugar
½tbsp.– ground cinnamon
¼tsp.– sea salt
½tsp.– Xanthan gum
1tsp.– pure vanilla extract
4large(2.5 lb. – organic Granny Smith apples)

1large – egg(I used home-raised chicken egg)
1tbsp.– water
¼cup– coarse cane sugar
½tsp.– ground cinnamon
2– Puff pastry sheets (I've used 8x14 inches in diameter sheets)

How to Make Apple Filling for Puff Pastry Turnovers
Let's start by first making our apple-filling mixture!
To do this, take a small glass bowl and combine all dry ingredients in it, namely white sugar, brown sugar, cinnamon, sea salt, and Xanthan gum.
Stir all together to combine and set aside until ready for use.
Next, rinse, peel, and chop apples. I like to use a handy onion chopper for this, but you may chop them any way you like. Place the chopped apples into a 5-quart saucepan.
Sprinkle the dry cinnamon-sugar mixture over the apples and mix until the apple cubes are well coated. Then add vanilla extract and mix once more.
Place apple filling mixture onto a stove burner and bring it to a cooking stage, stirring constantly. As soon as it starts simmering, cook for 2 minutes, always stirring constantly to prevent the sweet liquid from burning on the bottom of the pan.
Remove from heat and cool to warm before using. While the apple filling is cooling down, it will cook a bit more in the heat, so don't worry if the filling looks slightly undercooked at this point.

While the apple filling is cooling, prepare the topping. Combine coarse cane sugar and cinnamon and set aside until ready for use.

Crack an egg into a small bowl. Then add water and whisk together until well mixed. Set aside until ready for use.
How to Assemble Puff Pastry Apple Turnovers
Let's put everything together! Start by preheating the oven to 375 F.
Cut the pastry dough into squares. I used 4x4 square inch pastry squares while making this recipe.
Next, place a heaping tablespoon of the apple filling in the center of the dough.
Lightly wet the edges and then fold the pastry across diagonally to form a triangle.
Using a fork, crimp together the edges. I prefer to first pinch the ends together with your fingers, as in the process of making perogies, then finish crimping them using a fork for the design.
Transfer the turnovers to the prepared baking sheet or baking tray lined with parchment paper, spacing them at least 2 inches apart.
Cut small slits on the tops of each turnover then brush the tops with the egg wash prepared earlier. Sprinkle with the cinnamon sugar topping.
How to Bake Puff Pastry Apple Turnovers
Bake your turnovers for 20 minutes or until they turn golden brown. Remove from the oven and cool to warm before serving.
Notes
Safety caution: even though the turnover may be warm to touch on the outside, the inside filling may still be very hot! Check the inside first before serving children.Note: Turnover apple filling will almost always leak out a little here and there, no matter how well the edges are crimped. I use a spoon to push the filling back into the turnover where the filling leaked out from.
