First things first, rinse and chop all the ingredients: red potato, yellow potato, carrots, onion, garlic, and parsley.
Turn the Instant Pot setting to SAUTAdd 3 tablespoons of olive oil into the Instant Pot. Once the oil is hot and simmering add beef and let the beef cubes sear undisturbed for about 5 minutes, or until the cubes have a nice dark brown crust at the bottom.

Distribute the meat cubes evenly at the bottom, to avoid too much watering. If the meat waters while sautéing that means the cubes are overcrowded. It's best to divide the meat and sauté in two separate additions.
