2lbs.– stew beef meat
1.5lbs.- yellow potatoes
1lb.– red potatoes
1lb.– organic carrots
1small – yellow onion (or ¾ cup chopped)
1large – garlic clove
½cup– chopped fresh parsley
3tbsp.– extra virgin Olive oil
½cup– organic tomato sauce
2tsp.– sea salt(or to taste)
1tsp.– Mrs. Dash seasoning
½tsp.– Italian seasoning
¼tsp.– freshly ground black pepper
1tbsp.– organic beef bouillon paste
4cups– water
3bay leaves

How to Make Instant Pot Beef Stew
Making this delicious Beef Stew in an Instant Pot is easier than you think! Here's what you'll need to do step by step to make it:
First things first, rinse and chop all the ingredients: red potato, yellow potato, carrots, onion, garlic, and parsley.
Next, turn the Instant Pot setting to saute. Add 3 tablespoons of olive oil into the Instant Pot. Once the oil is hot and simmering add beef and let the beef cubes sear undisturbed for about 5 minutes, or until the cubes have a nice dark brown crust at the bottom.
Distribute the meat cubes evenly at the bottom, to avoid too much watering. If the meat waters while sautéing that means the cubes are overcrowded. It's best to divide the meat and sauté in two batches.
Turn the meat cubes around to different sides and sear for an additional 3 to 4 minutes.
Then add chopped onion, garlic, salt, Italian Seasoning, Mrs. Dash seasoning, and freshly ground black pepper. Combine everything well and sauté for 5 more minutes or until the onion is caramelized.
Next, add the rest of the ingredients (except chopped parsley): tomato sauce, water, yellow potatoes, red potatoes, carrots, bay leaves, and chicken bouillon. Mix it all together.
Close the Instant Pot with its lid, turn the valve to seal, and press the soup/stew cycle. Program the cooking time to 20 minutes on high pressure.
Finally, after it's done cooking allow the pressure to release manually. Then, carefully open the lid. Stir in chopped parsley.
Allow the stew to cool a bit before serving. Your delicious Instant Pot Beef Stew is ready to be served!
