Sautéed the potatoes for 10 minutes on medium heat; mix the potatoes from the bottom to top every couple of minutes.
During this time prepare your vegetables. Wash and slice cucumbers and tomatoes.
Potato should be half way cooked, add one whole stick of chorizo.
Reduce heat to low and mix in chorizo into potato and sautéed it another 5 minutes turning it every minute from the bottom to the top.
In the small bowl add eggs, milk and salt. Beat it well and add to potato with chorizo.
Cook for another 5 minutes mixing it constantly. Cover with lid and set it aside.
Heat Tortillas on the skillet on low heat 1 per side on low heat and put them into the original bag. Place the tortilla bag into folded towel to keep them warm. The tortillas should become soft sitting in the bag, that way it will be easy to fold.
How to Assemble Soft Breakfast Tacos.
Place one tortilla at a time onto a plate. Add ½ cup of the potato/egg/chorizo in the middle of the tortilla. Spread cucumbers and tomatoes and then garnish with 3-4 tsp of sour cream (depends how much you like it. I like a lot of sour cream on it).
Start folding the bottom first and then right and left sides.
