Ingredients
1pack - (16-20 ct) flour tortillas
6– large potatoes
1stick - Beef Chorizo
8– medium eggs
1teaspoon– salt
½cup- whole milk
5– large tomatoes
3– garden cucumbers or 1 English cucumber
1lb– sour cream

How to Make Breakfast Taco Filling
To start, gather all the ingredients and begin by peeling and washing the potatoes.
Once the potatoes are clean, cut them into small cubes.
Heat a skillet over medium heat and add the potatoes, sautéing them for around 10 minutes. Make sure to mix the potatoes from the bottom to the top of the skillet every couple of minutes to guarantee that they cook evenly.
While your potatoes are cooking, prepare your vegetables by washing and slicing the cucumbers and tomatoes.
Once the potatoes are halfway cooked, add a stick of chorizo to the skillet. Reduce the heat to low and mix the chorizo into the potato mixture.
Sauté everything for another 5 minutes, turning the mixture every minute from the bottom to the top.
In a small bowl, beat the eggs, milk, and salt together.
Once the chorizo and potatoes are cooked, add the egg mixture to the skillet and continue to cook and scramble everything for another 5 minutes.
Make sure to mix everything constantly while it cooks. Once everything is cooked, cover the skillet with a lid and set it aside.
To heat the tortillas, place them one at a time onto a skillet over low heat. Heat each side for around 1 minute and then place them into the original bag.
Once all the tortillas are heated, place the bag into a folded towel to keep them warm. This will make sure that the tortillas stay soft and are easy to fold.
How to Assemble Breakfast Tacos
To assemble the tacos, place one tortilla onto a plate and add ½ cup of the potato/egg/chorizo mixture in the middle.
Spread the sliced cucumbers and tomatoes on top of the mixture and then garnish with 3-4 teaspoons of sour cream.
Start folding the bottom of the tortilla up and then fold in the right and left sides. Enjoy your delicious breakfast tacos with a cup of fruit juice!
