Prepare the Bacon and Potatoes
Start by frying your bacon in a non-stick skillet or broil bacon it in the oven for faster and crispier results. Once it is crispy, remove it from the pan and place it on a plate lined with paper towels. This will help absorb any excess grease.
Don't get rid of all that delicious bacon grease! Instead, drain the pan but keep about two tablespoons for later use. It will add an extra layer of flavor to our omelet.
Next, wash, peel, and cut your potatoes into small cubes.
Sautee potatoes until tenter in the frying pan using bacon fat. Season with salt and pepper to taste.
Assembling and Baking the Omelet
Preheat your oven to a temperature of 400 ℉. Take the bacon grease you saved and add it to a baking pan. Be sure to grease the sides of the pan to prevent sticking.
Spread your sautéed potatoes evenly on the bottom of the pan, creating a tasty layer for your omelet.
Scatter the bacon pieces over the potatoes. This will provide a delightful crunch and salty bite in every mouthful.
In a small bowl, combine your eggs, milk, and a pinch of salt and pepper.
Whisk them together until they're fully blended. This should take about a minute.
Now, pour your egg mixture over the potatoes and bacon in the baking pan.
Cover your pan with aluminum foil and bake in the oven at the preheated temperature for about twenty-five minutes.
Once your omelet is baked, remove it from the oven and let it cool for a couple of minutes. This will make it easier to slice and serve. Add any garnishes you prefer.
