These No-Bake Strawberry Kiwi Cheesecake Parfaits have beautiful layers of graham cracker crumbs, cheesecake filling, and strawberries for the perfect balance.
Start by crushing graham crackers in a food processor or by using a rolling pin (you can add a couple of tablespoons of melted butter to the crumbs for them not to be so powdery). Set it aside in a medium bowl until ready for use.
Next, rinse and cut the fruits into small pieces.
Time to make our cheesecake layer. In a bowl of a stand mixer, beat cream cheese and sugar until creamy consistency and sugar granules are dissolved. Using a silicon spatula scrape the sides of a mixer bowl couple of times if necessary.
Next, add heavy cream, scrape the cream cheese off the sides of the mixer bowl, and start beating on low gradually increasing the mixing speed and beating it until smooth in texture for a minute or so.
How to Assemble Strawberry Kiwi Cheesecake Parfaits Cups
Let’s assemble it all! Add 2 tbsp. of crushed graham cracker crumbs onto the bottom of each cup. Using these crushed cookies will give an incredible texture to the dessert.
Next, fill a a 16" piping bag and 2A large round tip and pipe ¼ cup of the creamy cheesecake cream into each cup.
Top each cup with cut into small pieces strawberries and kiwis.
Fill a 14" piping bag and a 6B tip with the remaining creamy cheesecake cream and pipe a star on top of each fruit cup, and then sprinkle the cream star and fruits with the remaining graham cracker crumbs. You can also add a dollop of cream instead.
Insert the spoon into each parfait cup, and chill in the refrigerator for at least one hour before serving.
