Soak, rinse the beef roast, and pat dry with paper towel (optional, my preference is as clean as possible). Make the rub: measure out the spices, mix them together, and season roast generously and evenly with seasoning rub.
Place the roast into a gallon size Ziploc bag and refrigerate it to marinate for 8 to 12 hours.
Preheat the oven to 450 F (232 C). Line a deep roasting pan (I use a turkey roaster) with aluminum foil. (Optional tip for easy cleanup.) Place the roast bone side down onto the pan rack.
Sear the roast for 15 minutes to brown. Reduce the temperature to 300 F (150 C) and roast for
♦ Rare Done - Rare Done – 3 hours or 125 F (52 C) – captured in the pictures for contrast
♦ Medium Done – 3.75 hours or 145 F (63 C)
♦ Well Done – 4.5 hours or 175 F (79 C) – my family's preference ;) ... and YES! I placed the roast back in the oven after photo shooting until it got to the well-done stage we love. :D
Transfer the roast to a cutting board, cover with aluminum foil and allow it to rest. ;)
Slice the roast first across the grain, then however you prefer.
