Trim the fat off each chicken breast, then cut slashes over the top of the chicken breasts, about ½ inch wide and deep.
Rinse chicken, and place in a strainer to drain. For a quicker process, you may dry them by patting each chicken breast with a paper towel.
How to Marinate and Crust Chicken
Let's make our marinade and crust the chicken!
Add all the ingredients, namely salt, pepper, pressed or grated fresh garlic, freshly grated Parmesan cheese, and mayonnaise into a bowl. Combine all ingredients together and glaze all chicken breasts well.
Marinate in the refrigerator for at least 2 hours (or as far in advance as you can). About 12 hours is a decent time for good flavor absorption, but the longer the marinating time, the softest, juicier, and tender the chicken will become.
Preheat the oven to 425 F. Pour some Italian bread crumbs on a large plate or a shallow bowl. Dip the chicken in the breadcrumbs to coat and dredge it on each side, and then dust off the excess.
Next, lay them out on a baking sheet lined with parchment paper.
How to Bake Parmesan Crusted Chicken
Bake the chicken breasts for 30 to 40 minutes depending on your oven and the thickness of the chicken breast, or until golden brown.
For a more certain readiness measurement, you may also insert a thermometer into the thickest part of the breast. Baking is complete at 165˚F (74˚C).
Remove from the oven. Cover the entire baking sheet with foil or place another baking sheet over the baked chicken and allow the chicken to rest and further moisten for about 15 minutes.
