This is one of those meals that practically define tradition as far Ukrainian traditional food goes; called SIRNIKI. It is a true childhood staple. For Ukrainians out there; when you were little, remember those delicious, fluffy, incredibly smelling patties that were on the table when you got there and just couldn’t wait to devour? I have been making these very tasty cottage cheese pancakes for a very long time now. They have created the same cozy traditional feeling, a taste of home, under our roof as well.

  • 5 small – eggs
  • 1 cup – sugar
  • 24 oz. – cottage cheese
  • 1 tsp – baking soda
  • 1 tbsp – vinegar
  • 1 tsp - salt
  • 3 ½ cup – all-purpose flour
  • Oil for sautéing
  1. I start by grinding the cottage cheese to a paste-like texture. I’ve tried making them without grinding the cheese before and the patties became very dry after sautéing.
  2. In a medium bowl add eggs, sugar and beat on high with a hand mixer for 3 minutes.
  3. Add your pureed cottage cheese and beat on medium for 2-3 minutes until well combined.
  4. Activate baking soda with vinegar; pour over cottage cheese/egg mixture.
  5. Mix with your hand mixer for another minute then add 3 cups of flour and 1 tsp of salt through the sifter.
  6. Mix the flour in with a spatula until all flour is combined.
  7. Take remaining 1/2 cup of flour and sift it on top of a big cutting board.
  8. Transfer the dough from the bowl onto the floured cutting board.
  9. Roll the dough into a ball. Cut it in half, cover two dough balls with flour so they don’t stick, and set one half aside.
  10. Take one half of the ball and roll into a log.
  11. Cut the log into 1 inch pieces. Cover each side with flour and flatten each piece with your hand to make it 1/4 inch thick, oval shaped cottage cheese pancakes.
  12. Heat skillet on low temperature on the stove; add 2 tbsp. of olive oil. Place pancakes on the skillet and sauté 3-4 minutes per side until golden brown.
  13. Remove them from skillet. Place another set of pancakes on the skillet and continue shaping and sautéing until you’re done with all the pancake dough. Take the second half of the dough and repeat the steps of cutting, shaping and sautéing the pancakes.
  14. Enjoy warm or cooled.
