Fry bacon. Remove from pan and place on a paper towel lined plate. Drain the grease from pan between frying, but save 2 tbsp. for later.

Wash, peel and cut potatoes into cubes.

Add 1 tsp of olive oil in a small pan and then add potatoes. Sprinkle with ¼ tsp of salt and sauté until potatoes are halfway done.

Preheat oven to 400F. Add the 2 tbsp saved bacon grease to a baking pan. Grease the sides of the pan. Spread sautéed potatoes on the bottom of the pan.

Separate fat from bacon meat.

Scatter the bacon pieces over the potatoes.

In a small bowl add eggs, milk and salt.

Wisk together until all combined, for about 1 minute.

Pour it over potatoes and bacon.

Cover with aluminum foil. Bake in the oven at 400F for 25 minutes.

Remove from the oven. Cool for couple of minutes before serving.

Enjoy with a pickle and cold milk or your side preference!
