Farmers Cheese Cheesecake Crumbs Ingredients
2cups- crushed Biscoff cookies or Honey Graham Crackers
1lb.- strawberries (you may use fruit topping of our choice)
6 - parfait cups or water glasses
Instructions
How to Make Cheesecake Crumb
Place Biscoff cookies or graham crackers in a food processor and pulse for 1 minute.
Add 1 tablespoon of sugar and 2 tablespoons of butter, then pulse for another minute or until well blended (if using Biscoff cookies instead graham crackers, then skip this part since they are already buttery and sweet enough).
Next, rinse and pat the strawberries dry using a paper towel.
Cut strawberries into small cube-like pieces and set aside until ready for use.
How to Make Cheesecake Filling
Place the farmer's cheese, sour cream, sugar, and a pinch of sea salt into a large bowl. Whisk using a hand mixer until well combined.
In a mixer bowl of an electric mixer, add heavy cream and beat on high for 2 minutes or until thick (do not overbeat). Add the farmer's cheese mixture to the whipped heavy cream and gently fold it in using a spatula.
How to Assemble Farmer's Cheese Cheesecake
Time to assemble our delicious cheesecake! To do this, start by placing 3 tablespoons of toasted graham cracker crumbs on the bottom of each dessert cup.
Next, pipe the cheese mixture to cover the crumbs, and then top the cheese with strawberries. Personally, I also like to add kiwi for additional taste and color!
Repeat the same assembly steps to create a second layer. Finally, garnish each dessert glass with mint leaves.
