Step 1

In a large bowl, cream together the butter and sugar until light and fluffy using an electric mixer. This should take about 2-3 minutes.

Step 2

Add eggs, one at a time, and mix well after each addition. Stir in vanilla extract and salt. In another bowl, whisk together flour and baking powder.

Step 3

Gradually add flour mixture to the butter mixture and mix until just combined. Be careful not to overmix. Divide the dough in half and shape into two disks.

Step 4

Wrap each disk tightly in plastic wrap and refrigerate for at least 2 hours or up to 2 days. This will help the dough firm up and make it easier to roll out.

Step 5

When ready to bake, preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper. On a lightly floured surface, roll out the dough to about 1/4-inch thickness.

Step 6

Use cookie cutters to cut out desired shapes and transfer the cookies to the prepared baking sheet, leaving about 1 inch between each cookie.

Step 7

Bake for 10-12 minutes, or until the edges are just starting to turn golden brown.

Step 8

Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Repeat with the remaining dough, rerolling scraps as needed. Decorate the cookies with icing, sprinkles, or any other desired decorations.
