The Best Chocolate Zucchini Muffins

Ingredients

– 3 large – eggs (room temperature - they whip faster) – ▢½ cup – granulated sugar – ▢½ cup – honey (I use raw honey) – ▢1 cup – unsweetened apple sauce – ▢1 tsp. – pure vanilla extract – ▢3 cups – all-purpose flour – ▢½ tsp. – baking powder – ▢½ tsp. – baking soda – ▢¼ tsp. – sea salt – ▢½ cup – cocoa powder – ▢1 small garden zucchini or 2 cups grated – ▢Dark chocolate chips and old-fashioned oats for topping (optional).

Step 1

Prepare dry ingredients: In a bowl, combine flour, baking soda, baking powder, salt, and cocoa powder. Whisk and sift for a fluffy mix.

Step 2

Grate zucchini and set aside. Preheat oven to 350℉.

Step 3

Beat eggs and sugar, then add honey, applesauce, and vanilla extract for wet mixture.

Step 4

Gradually add dry mix, alternating with zucchini, into the wet mixture. Optionally, add chocolate chips for extra flavor.

Step 5

Scoop batter into muffin liners, top with oats and chocolate chips, bake at 350℉ for about 25 minutes until golden and toothpick comes out clean. Cool for 15 mins before removing from pan.
