Step 1

Preheat your oven to 350°F and grease two 9" cake springform pans.  In a medium bowl, whisk together flour, cinnamon, pumpkin pie spice, nutmeg, baking soda, baking powder, and sea salt.

Step 2

In a separate mixing bowl, beat eggs and sugar until light, fluffy, and pale yellow, about 5 minutes.

Step 3

Reduce mixing speed, then add vanilla extract, pumpkin puree, and brewed espresso. Mix well.

Step 4

Carefully add dry ingredients in six separate additions. Fold gently with a spatula to preserve air pockets.

Step 5

Divide the batter into the prepared pans and bake for about 25 minutes. Let the sponges cool in pans for 10 minutes, then remove and cool completely.

Step 5

While cakes cool, prepare the frosting by beating butter, cream cheese, sugar, and heavy cream. Add spices and flavorings. Split the cooled cakes, frost between layers and on the outside. Decorate and chill for 4 hours or overnight.
