– 6 - large carrots grated (using Korean grated) – ▢2 garlic – cloves finely diced – ▢1 tsp - sea salt – ▢1 tbsp – lemon juice – ▢⅛ tsp - black pepper – ▢¼ cup - olive oil or avocado oil – ▢1 tbsp. – chopped fresh dill

Step 1

Peel and rinse the carrots to remove any dirt. Julienne the carrots into thin, long strips using a Korean grater, mandoline, or a sharp knife.

Step 2

Mince garlic cloves and place them in a large bowl. Add sea salt, lemon juice, and a pinch of black pepper to the bowl. Drizzle olive oil over the mixture. Add julienned carrots and fresh dill to the bowl. Mix everything until the carrots are evenly coated with the dressing. Chill in the fridge for a few hours before serving.
