Raspberry Mini Cakes

If crepes with cheese weren’t enough, here another fantastic Fruit Crepe Cake Recipe that is an absolute must-try. The experience of this cake is almost tough to get across.

Ingredients

Fruit Crepe Cake Batter Ingredients – ▢2 ½ cups (590 ml) – organic whole milk – ▢3 large – eggs (I used home-raised chicken eggs) – ▢¼ cup (60 ml) – extra virgin olive oil – ▢3 cups (400 g) – organic all-purpose flour – ▢⅛ tsp. (0.6 ml) – baking powder – ▢¼ tsp. (1.25 ml) – sea salt Fruit Crepe Cake Cream Ingredients – ▢3 cups (700 ml) – cottage cheese – ▢3 cups (700 ml) – heavy cream – ▢1 cup (9237 ml) – bakers sugar (or granulated sugar processed in the food processor) – ▢1 tsp. (5 ml) – pure vanilla extract Fruits For the Crepe Cake – ▢Kiwis – ▢Strawberries – ▢Raspberries

Step 1

Prepare the crepe batter by combining the flour, sugar, salt, milk, eggs, and melted butter in a bowl. Whisk until smooth and no lumps remain.

Step 2

Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour a small amount of the crepe batter into the skillet and swirl it around to evenly coat the bottom.

Step 3

Cook the crepe until the edges start to brown and the center is set. Flip the crepe using a spatula and cook for a short time on the other side.

Step 4

Repeat the process with the remaining crepe batter, stacking the cooked crepes on a plate. Once all the crepes are cooked and cooled, prepare the filling by whipping the heavy cream until stiff peaks form. Set aside.

Step 5

Place a crepe on a serving plate and spread a thin layer of whipped cream on top. Add a layer of sliced fruits, such as strawberries and kiwis, on top of the cream.

Step 6

Repeat the layering process with the remaining crepes, whipped cream, and sliced fruits, alternating the fruit varieties for a colorful presentation.

Step 7

Finish the crepe cake by spreading a final layer of whipped cream on top and garnishing with additional sliced fruits.

Refrigerate the crepe cake for at least 2 hours or overnight to allow the flavors to meld and the cake to set.
