Classic Braised Potatoes

Ingredients

– 5 lbs. - russet potatoes – ▢2 large - organic (or homegrown carrots) – ▢2 lbs. – beef (rinsed and cubed) – ▢1 tbsp. – Mrs. Dash seasoning – ▢1 tbsp. – Garlic Salt – ▢1 tsp. – Sea Salt – ▢1 tsp. – Vegeta (add more Mrs. Dash seasoning if don’t have Vegeta) – ▢¼ tsp. - ground Black Pepper (to taste) – ▢2 - 4 - Bay leaves – ▢2 - Olive oil (as needed for frying)

Step 1

Measure out your seasoning, including salt, pepper, parsley, and garlic. Mix them and set aside. Soak the meat in water, then rinse thoroughly. Drain.

Step 2

Cut beef into 1" cubes. Place in a Ziploc bag or bowl. Sprinkle and mix with the spice mixture. Cover and refrigerate overnight.

Step 3

Peel, rinse, and grate carrots.

Step 4

Peel, rinse, and cube potatoes. Place in a pot with water, salt, and bay leaves. Bring to a boil, reduce heat, and cook for about 20 minutes.

Step 5

Heat oil in a skillet. Sear seasoned meat on high, stirring constantly. Reduce heat, continue frying, and add carrots. Stir, add tomato paste and cream, simmer for a few minutes.

Step 6

Add meat and carrot mixture to cooked potatoes. Mix well and let it lightly boil for 10-15 minutes. Cool for 30 minutes before serving. Enjoy!
