Meringue Instructions – ▢12 large – room temperature eggs – ▢4 cups – Bakers sugar Cream Instructions – ▢5 cups – cold Heavy cream – ▢1 cup – sugar (I used organic sugar) Berries You’ll Need – ▢2 lbs. – strawberries – ▢2 lbs. - raspberries – ▢1 lb. – blackberries – ▢1 lb. – blueberries

Step 1

Preheat your oven to 350 F and prepare parchment paper cut-outs for the cake layers.

Step 2

Beat egg whites and sugar to make the meringue. Pipe the meringue onto the parchment paper cut-outs and bake for 6 hours at a controlled temperature.

Step 3

Chill a mixing bowl in the freezer. Beat heavy cream and sugar to make the cream filling.

Step 4

Assemble the cake layers with cream and mixed fruit on a serving plate. Garnish the cake with more fruit on top.
