For Broccoli Chicken Mac and Cheese – ▢4 tbsp. – unsalted butter – ▢6 cups – whole milk (or half & half) – ▢1 lb. – pasta (shells, spirals, or elbows) – ▢1 tsp. – sea salt – ▢¼ tsp. – onion powder – ▢½ tsp. – garlic powder – ▢½ tsp. – paprika – ▢¼ tsp. – freshly ground black pepper – ▢5 cups – freshly grated cheddar cheese – ▢¼ lb. – broccoli florets

Step 1

Place macaroni noodles in the Instant Pot bowl. Evenly distribute butter among the noodles and sprinkle sea salt, garlic powder, onion powder, paprika, and black ground pepper. Stir to ensure the seasonings and butter coat the noodles thoroughly.

Step 2

Pour milk into the Instant Pot with the seasoned noodles. Secure the lid and set the valve to the “sealing” position. Cook on high pressure for 5 minutes. Perform a quick pressure release after cooking and carefully open the lid.

Step 3

Stir in sharp cheddar cheese and broccoli florets. Cover the pot without sealing and let it rest for about 15 minutes to allow the cheese sauce to thicken and the broccoli to cook. Once the sauce has thickened and the broccoli is tender, stir well and let it cool slightly before serving.
