Ingredients

– 5 – eggs – ▢¾ - 1 cup – sugar – ▢24 oz. – cottage cheese – ▢1 tsp – baking soda – ▢1 tbsp – vinegar – ▢¼ tsp - salt – ▢4 - 5 cups – all-purpose flour – ▢Olive oil for sautéing

Step 1

Grind cottage cheese to a paste-like texture for moist pancakes. In a large bowl, beat eggs and sugar on high for 3 minutes with a hand mixer. Add ground cottage cheese and mix on medium for 2-3 minutes.

Step 2

– Activate baking soda with vinegar, then add to the mixture and mix for another minute. – Sift 3 cups of flour and 1 tsp of salt into the mixture, stirring until well combined.

Step 3

– Transfer batter onto a floured cutting board. – Divide the dough in half and cover with flour. – Roll one half into a log, cut into 1-inch pieces, flatten to ¼ inch thick ovals.

Step 4

– Heat a frying pan with oil on medium-low heat. – Sauté each piece for 3-4 minutes per side until golden brown, then remove. – Repeat for remaining dough.
