Step 1

In a food processor bowl, add a cold egg, salt, freshly squeezed lemon juice, and garlic juice.

Start the food processor and pulse on high for 30 seconds.

Step 3

Slowly drip avocado oil through the opening of the food processor lid while it's running. Pulse for an additional minute and a half. Turn off the food processor, scrape down the sides of the bowl and lid with a spatula. Beat for another 30 seconds.

Step 4

Refrigerate the mayonnaise for at least 4 hours to allow the flavors to incorporate and the mixture to thicken further. Once chilled, your homemade mayonnaise is ready to be served and used in various recipes!
