– 1 large – egg
– ▢1 tsp. – salt
– ▢1 tbsp. – freshly squeezed lemon juice
– ▢1 cup – avocado or olive oil
– ▢2 drops of freshly squeezed garlic juice (optional, but my preference)
Keep blending until the mayonnaise has emulsified and thickened, which should take about 1-2 minutes. Once the mayonnaise is thick, turn off the blender and taste it.
If needed, add additional salt or lemon juice to taste. Once the mayonnaise is at the desired flavor, pour it into a clean jar or container and store it in the refrigerator.
